Yalumba Merlot 2007

Fermentation of the merlot grapes was carried out in static potter and rotary

fermenters. Warm temperatures at the onset of fermentation and a three to

five days post ferment maceration period helped with the extraction of soft

fleshy tannins to build wine structure.

The Yalumba Y Series Merlot is an intense crimson red and displays a very

pretty bouquet of violets, blueberries and black forest cake, with a splash of

wild fennel. The wine-style is warm and generous with juicy fruit and tongue

hugging tannins. This gives an impression of velvet in the mouth and brings a

long and dry finish to the wine.

Five spice duck and stir fried Asian greens is the perfect match for this wine.
